Did you ever hear about 'Tarese', or 'Fagioli Zolfini', or 'Pollo di Valdarno'? These are the signature dishes of the Slow Food-Section of Valdarno. Over centuries the tradition of these products were preserved by the people living in our area. The Tarese is a certain ham. prooduced from meat of organic breeded pigs, that have to be rather old. The Fagioli Zolfini are white beans that consist of very thin and therefore very well digestable skins and the Pollo di Valdarno is an ancient breed of chicken with very strong meat.

 

Many producers of Valdarno take a lot of pride in preserving the traditions. And it is so fasciating to discover these products. You will find many interesting adresses of small producers in the housebook of the villa. And if you wish our neighbour Francesca will cook for you a true tuscan dinner (extra charge).
